A Valentine Treat in a Flash


Sometimes during nap time, I like to whip up a little treat to greet the kiddos once they wake up. I made a batch of these on Monday afternoon, and they were a hit!

Recipes for cake mix cookies abound in blogland, and the dough recipe for these is something you very well might have seen before. But what makes these little jewels special is that they are all prettied up for Valentine's Day with a red sugar coating and a piped almond bark heart. I think that wrapped up, these would make great Valentine goodies for kiddos to hand out to their friends!

Sweetheart Cake Mix Cookies

1 box strawberry cake mix
1/2 cup butter, softened
1 egg
White candy coating (optional)

Preheat oven to 350.

Place cake mix and butter in a stand mixer, and mix well to combine. The mixture will be very dry at this point, and you'll think there is no possible way it will come together, but trust me: it will! Add the egg, and mix well to form a very thick batter.

Form your dough into 1-inch balls, and roll each one in red sugar crystals. Place the cookies 2 inches apart on a greased baking sheet and bake for 10-12 minutes, or just until cookies are set. Allow to cool on the baking sheet for 2 minutes before moving them to a cooling rack to cool completely.

Once the cookies are cool, melt a couple of squares of candy coating in the microwave in 30 second increments, stopping to stir after each increment, until the coating is completely melted. Allow to cool for a couple of minutes before spooning the coating into a zip-top bag. Carefully snip off a very small notch from one of the bottom corners of the bag, and then pipe hearts onto the center of each cookie. Allow the candy coating to set completely.
