Mexican Wedding Cookies

Serves: 3 dozen
  • 1 cup butter, softened
  • 1 cup powdered sugar, plus ½ cup for rolling the cookies
  • 2 cups all-purpose flour
  • ¼ teaspoon salt
  • 1 cup ground pecans
  • 1 teaspoon vanilla
  1. Preheat oven to 350 degrees and line two baking sheets with parchment paper.
  2. Cream the butter with an electric mixer until fluffy. Gradually add the powdered sugar, mixing until fully incorporated. Stir in the flour, ½ cup at a time, until incorporated. Stir in the salt, pecans, and vanilla, mixing well.
  3. Shape the dough into 1½ inch balls, and place on the parchment-lined baking sheets. Bake for 10-12 minutes, or until set. While the cookies are warm, roll each in powdered sugar, and place on a wire rack to cool completely.
