Blueberry Brown Sugar Cookies
  • 1 stick butter softened
  • ¾ c. brown sugar
  • 1 egg
  • 1 t. vanilla
  • 2 T. milk
  • ¾ c. fresh blueberries
  • 1¾ c. flour
  • ¼ t. salt
  • ¾ t. baking powder
  • 1½ t. cinnamon
  1. Preheat oven to 375 degrees.
  2. Line cookie sheet with parchment paper.
  3. In a medium bowl whisk together flour, salt, baking powder and cinnamon. Set aside.
  4. In the bowl of a standing mixer with paddle attached beat brown sugar and butter until fluffy, about 3 min. scraping sides as needed.
  5. Add egg and vanilla.
  6. Add flour mixture.
  7. Dough will be a bit dry so add the milk a Tablespoon at a time. 2 T. should be plenty.
  8. Fold in blueberries.
  9. Put ½ c. white sugar on a plate or piece of wax paper.
  10. Form balls of dough and roll in white sugar. I used a cookie scoop and dropped the scoops onto the sugar. Place balls on cookie sheet.
  11. Bake for 12 min.
  12. If you do not have a convection oven it is recommended that you rotate the cookie sheet halfway through the cook time.
  13. Cool cookies on pan for 1 minute and then remove to wire rack to cool.
