2ears of grilled corncut from cob OR 1 (11-ounce) can Mexican-style corn
4-5small sweet red and yellow pepperssliced OR 1 medium red or yellow bell pepper, chopped

Instructions
Spray a large roasting pan with non-stick spray. Add the chips, and then top evenly with the refried beans. Layer on the chicken, cheese, corn and peppers. Bake at 350 for about 20 minutes, or until ingredients are heated through and cheese is melted. Garnish with your choice of toppings before serving.
Notes
White corn chips can be substituted for the blue corn chips. No chicken on hand? This recipe is equally delicious with chopped pork or beef.
