One-Pan Banana Cake Recipe with Orange Buttercream Frosting

Ingredients
  

  • 2 very ripe bananas mashed (about one cup)
  • 1 cup flour
  • 3/4 cup chopped walnuts or pecans
  • 2/3 cup sugar
  • 1/4 cup cornstarch
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup vegetable oil
  • 1 large egg slightly beaten
  • 1 tablespoon orange juice
  • 1 teaspoon vanilla extract

Orange Buttercream Frosting

  • 1/4 cup unsalted butter softened
  • 1 1/2 cups powdered sugar
  • 1 tablespoon orange juice
  • 1 tablespoon grated orange peel
  • 1 teaspoon vanilla extract

Instructions
 

  • Mash bananas with a fork.
  • In a 9-inch square baking pan (or an 11x7-inch pan) sprayed with non-stick spray, stir flour, nuts, sugar, cornstarch, baking soda, and salt with a fork. Add bananas, oil, egg, orange juice, and vanilla. Mix with a fork until blended.
  • Bake at 350 degrees for 30-35 minutes, or until cake pulls away from sides of pan and toothpick inserted in center come out clean. Cool in pan. Spread with orange frosting.

Orange Buttercream Frosting

  • Cream butter with an electric mixer. Gradually add sugar, beating well until combined. Add orange juice, orange peel and vanilla; stir to blend. Spread on cooled cake
