Baked Banana-Carrot Doughnuts

Baked Banana-Carrot Doughnuts

Packed with good-for-you carrots, bananas and whole wheat, these doughnuts are a delicious and nutritious way to start your day. They are perfect the perfect way to entice finicky eaters, too!

Ingredients

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 2 tablespoons wheat germ
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 2 Large eggs
  • 1/2 cup canola oil
  • 4oz baby food carrot puree
  • 1 Medium banana (mashed)
  • 1/2 cup plain yogurt
  • 1 cup grated carrots

Directions

Step 1
Heat oven to 350˚. Spray a standard doughnut pan with non-stick spray.
Step 2
Combine the first 8 ingredients in a large bowl. Whisk eggs, oil, baby-food carrots, mashed banana and yogurt in a separate bowl. Gently stir the liquid ingredients into the dry. Stir in the grated carrots.
Step 3
Fill each well in the doughnut pan 3/4 full. Bake for approximately 10 minutes, or until a toothpick inserted in doughnut comes out clean.
