Lemon-Lime Mousse Icebox Pie

As refreshing as a dip in the pool on a sultry summer afternoon, this Lemon-Lime Mousse pie combines the bright citrus flavors of lemon and lime with the pleasant sweetness of vanilla wafer cookies. With no baking required and just a few minutes of prep time, this is an easy pie recipe perfect for summer!

Lemon-Lime Mousse Pie

This no-bake Lemon-Lime Mousse icebox pie combines the tart citrus flavors of lemon and lime with the sweetness of vanilla wafers. This is the perfect summer recipe, as it tastes refreshing and is a breeze to prepare!

Ingredients

  • 12oz can evaporated milk (chilled)
  • 1 cup sugar
  • 3oz lemon Jello
  • 1/4 cup fresh lime juice
  • 3 dozen vanilla wafers (divided)
  • 2 tablespoons butter (melted)

Directions

Step 1
To prepare the crust, crush 20 vanilla wafers. Combine wafer crumbs and butter, and press mixture into bottom of a 9-inch pie plate. Arrange remaining wafers around edges. Set crust aside to prepare the filling.
Step 2
Beat evaporated milk at high speed with an electric mixer until foamy; gradually add sugar, beating well. Add Jello; beat until blended. Stir in lime juice. Spoon filling into prepared crust. Freeze 8 hours or until firm.

    This looks delicious, Amy! I make a summertime pie with lemonade concentrate, Cool Whip, and sweetened condensed milk. We love it, but it’s fairly heavy. This sounds light as a feather and very refreshing!
