Apple-Praline Bread + Gratitude Blog Hop

It’s the perfect time of year to stop and take a minute to count your many blessings, and some of my blogging friends and I thought it would be very fitting of the season to gather together today for a gratitude blog hop to let our families know just how much we love and appreciate them!

Today, I’m sharing one of our family’s favorite recipes, Apple-Praline Bread. This bread just exudes all of the coziness of fall, with a spicy, apple-studded crumb and a decadent pecan praline topping. This is a perfect recipe to prepare to enjoy as a family on a lazy weekend morning, but it is also a fabulous recipe to make and share with someone (think of teachers, co-workers, neighbors and friends) to show them how much you care!

After you grab this yummy recipe (it really is to-die-for good!) be sure to check out all of the other stops on the Gratitude Blog Hop to see the fabulous projects my friends have shared to go along with the “Gratitude” theme. There are recipes, printables and family traditions included in this blog hop. So many great ideas!

Ingredients
  1. 1 1/2 cups chopped pecans, divided
  2. 1 cup sour cream
  3. 1 cup granulated sugar
  4. 2 large eggs
  5. 1 tablespoon vanilla extract
  6. 2 cups all-purpose flour
  7. 2 teaspoons baking powder
  8. 1/2 teaspoon ground cinnamon
  9. 1/2 teaspoon baking soda
  10. 1/2 teaspoon salt
  11. 1 1/2 cups finely chopped, peeled gala apples
  12. 1/2 cup butter
  13. 1/2 cup firmly packed light brown sugar
Instructions
  1. Preheat oven to 350. Spread 1/2 cup of the chopped pecans in a single layer on a large baking sheet. Place in oven and toast for 5-6 minutes, or until fragrant, stirring halfway through to prevent scorching. Set pecans aside.
  2. Beat together the sour cream and next 3 ingredients at low speed just until blended. In a medium bowl, combine the flour and next 4 ingredients, whisking to blend. Add to the sour cream mixture in 3 additions, stirring just to combine after each addition. Stir in chopped apple and 1/2 cup toasted pecans.
  3. Spoon batter into a greased 9x5-inch loaf pan. Sprinkle with the remaining 1 cup chopped pecans, and press the pecans gently into the batter.
  4. Bake at 350 for approximately 1 hour, or until a wooden pick inserted in the center comes out clean. Shield the loaf with aluminum foil for the final 15 minutes of baking to prevent over-browning. Cool in pan on wire rack for 10 minutes. Remove from pan and place on wire rack.
  5. Combine butter and brown sugar in a microwave-safe bowl. Cook on high for about 3 minutes, stirring after each minute of cooking, until the sugar is melted. Spoon the mixture over the loaf and allow to cool completely.
Notes
  1. This bread freezes beautifully! To do so, wrap in 2 layers of foil and free up to 3 months. Thaw before serving.

Hop on over to these fun projects based around the Gratitude theme:
14 GRATITUDE printables, recipes and ideas

One thing that might not be terribly evident from a reader’s side of the computer screen is how much of a family affair blogging truly is. There are deadlines, hectic schedules, and a complete disarray and confusion of holiday seasons (for instance, having a Halloween wreath on our front door, Thanksgiving decorations on our kitchen table, and a full Christmas display on our mantel!). It’s a wild, crazy ride, and we as bloggers simply couldn’t do it without the love and support of our amazing families. We are so grateful for you!

Look at all these pretty faces! So much love in this collage:

Kristyn from Lil Luna // Desiree from the 36th Avenue

We thought it would be really fun to get our families’ perspective on blogging today, so we all asked them a few questions. It’s like a little behind-the-scenes glimpse behind the blogging curtain. Love it!

From my kiddos:

  • What is your favorite project that Mama has made? The Halloween googly eye wreath.
  • What is your favorite game to play? Life. We all like to see who can have the most babies. <<< LOL!!!
  • Are you tired of taking pictures for Mama’s blog? YES!!!!!!!

From Mr. Splendid:

  • What do you do for a living? I sell engineered electrical products and solutions.
  • How did you and Amy meet? We met way back when in elementary school.
  • How much time does Amy spend blogging per week? 50 hours. << Probably closer to the actual time than I care to admit!!
  • What is your favorite project that Amy has made? My driver head cover.
  • What is your favorite aspect of Amy’s blogging? The fact that she is so capable of doing projects around the house!

Happy Sunday, my friends. I hope you’re inspired to take some time today to stop and let your loved ones know how grateful you are to have them in your life!
