Classic Pecan Pie

November 6, 2013 By Amy @ Positively Splendid

To me, no Thanksgiving meal is complete without a generous slice of pecan pie to finish things off with a flourish. Today, I am sharing my family’s all-time favorite pecan pie recipe. With a satisfyingly crunchy top layer and a sweet and creamy amber filling, this pie is like a slice a fall on a plate!

This recipe for classic pecan pie at Positively Splendid looks absolutely delicious! Perfect for Thanksgiving!

Classic Pecan Pie

  • 1/2 cup butter
  • 1 cup sugar
  • 1 cup light corn syrup
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 unbaked 9-inch pie crust
  • 1 1/4 cups pecan halves, divided

Combine the butter, sugar, and corn syrup in a microwave-safe bowl. Microwave on high in 1-minute intervals, stirring after each interval, for 3 to 4 minutes total. (The sugar should be completely dissolved.) Allow mixture to cool for 15 minutes.

Whisk eggs together in a small bowl. Add a small amount of the sugar mixture to the bowl, whisking well. (This step is called tempering the eggs, and it will prevent them from scrambling when you stir them into the sugar mixture.) Add the eggs, vanilla, and salt to the sugar mixture, stirring well to combine. Pour filling into the unbaked pie crust.

Finely chop 3/4 cup of the pecan halves, and pour the chopped nuts onto the center of the filling. Carefully arrange the remaining pecan halves around the outer perimeter of the pie. When this outer ring is formed, finely chop any pecan halves that are left over and use them to fill in any uncovered areas of filling.

Bake at 325 for 50-55 minutes. Allow to rest for at least 30 minutes before serving.

I love pecan pie!! In fact, I was craving it for a whole month then last weekend my husband took me out to the House of Pies where I got a piece….yay!! It was so yummy!! I’m the only one in my family that loves pecan pie so I don’t make it because I would eat the entire thing myself 🙂 Thanks for the delicious recipe!!!
