Yum and double YUM! This recipe from my friend Michele at The Scrap Shoppe looks divine, and it comes just in time to start planning your Memorial Day weekend menu!

Hello Positively Splendid readers!
My name is Michele, and I create over at The Scrap Shoppe.

I use my blog to share interesting craft techniques, craft projects that catch my eye, and give you some fun freebies that you can download and use in your own crafting. And I also share a creation of my own each week which often includes a full tutorial so you can try it yourself.
I’ve only recently started to share recipes on my blog. I don’t know if its the crafter or the chemist in me, but I love to cook and try new recipes. I also love quick and simple recipes that can be made in a cinch, and that’s what I’m going to share with you today!
SUMMER POTATO SALAD
My summer potato salad is super simple to make and doesn’t take much time at all because there are no eggs involved. Most of the ingredients you probably have on hand already which just simplifies it more.
Did I mention its also delicious? It is!
Its great for summer when you have unexpected guests show up for the weekend or are looking to casually entertain a few friends for an evening. I love to keep onhand premade frozen hamburger patties and buns for just such an occasion, and this summer potato salad goes perfectly with them and can be made in about 40 minutes, for most of which you don’t even need to be in the kitchen. Which means you can be entertaining your guests!
Click on the image above (or click here) to download a free copy of the recipe. You can download an image file that contains both a 3.5×5″ and 4×6″ recipe card. Print and cut the size card that will fit in your recipe book.
I promise you will love the simplicity of this recipe! And your guests will love how tasty it is.
Thank you so much for letting me share, Amy!
Happy summer, everyone!

I love potato salad, especially when it’s made with red potatoes. A Memorial Day celebration meal must include potato salad, and this one certainly looks like a winner. Thanks for sharing!
