Cranberry Bread (Swell Noel #30)

Hi there Positively Splendid fans! I’m so excited to be hanging out with you today for the Swell Noel Handcrafted Holiday Celebration! Thanks for inviting me Amy!
I’m Liz and most of the time you can find me baking, decorating,and crafting on Hoosier Homemade. If you are a cupcake lover…Cupcake Heaven is the place for you! And a few months ago, my husband and I launched Pocket Change Gourmet, where we share budget friendly food with a little flair.
Cranberry Bread has been a favorite holiday treat of our family for a very long time. This recipe originally came from my Grandmother, I was too young to remember her baking it, but I do remember my Mom baking it every Christmas holiday.
Cranberry Bread Recipe:
  • 2 cups flour
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon soda
  • 1 1/2 teaspoon baking powder
  • 1 egg, slightly beaten
  • 1/2 cup Orange Juice
  • 2 Tablespoon butter, softened
  • 2 teaspoons hot water
  • 1/2 cup nuts, chopped finely
  • 1 1/2 cups Cranberries, chopped finely (fresh or frozen **see Note)
Instructions:
  1. Sift and set aside: flour, sugar, salt, soda and baking powder.
  2. In large bowl, slightly beat egg, add juice and butter, mix.
  3. Add dry ingredients to wet ingredients. Mix well.
  4. Chop cranberries and nuts in food processor.
  5. Add water, nuts and cranberries to the mixture with a spatula. As with all quick breads, don’t overmix, just combine ingredients.
  6. Spray small loaf pans with non-stick cooking spray.
  7. Bake at 350 degrees for about 30 min for small and 60 min for large. Or until a toothpick comes out clean.
Yield: 3 small loaves or 1 large loaf from this recipe.
**Note: If you find cranberries on sale, you can freeze them whole then use them for the bread later. When you are ready to use them, just chop them while frozen, it’s better to have a little moisture from the frozen berries. It’s kind of loud, but works just fine.
Giving a gift from your kitchen is not only thoughtful, but also frugal. And making a pretty package out of it is even more special.
You will need…
  • Small loaves of Cranberry Bread or your favorite bread
  • Plastic wrap and tape
  • Coffee filters
  • Scrapbook paper (glass to draw a circle and scissors)
  • Ribbon
Bake your bread and let cool completely. Wrap in plastic wrap and secure with tape. Cut a circle from scrapbook paper, place bread in coffee filters and tape the circle to the top and tie with a ribbon. You could also tuck a recipe card in with the bread.

    YUMMY! My kids all love cranberries, so this is going to be a must have this week.

    My favorite bread to make for the holidays is an orange cinnamon bread. It is moist and just so good. The smell of it makes me think of Christmas.

    Great recipe & great wrapping suggestion! I always make Maji bread at Christmas especially for our granddaughter…her favorite!
