One-Pan Banana Cake Recipe with Orange Buttercream Frosting

  • 2 very ripe bananas, mashed (about one cup)
  • 1 cup flour
  • ¾ cup chopped walnuts or pecans
  • ⅔ cup sugar
  • ¼ cup cornstarch
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup vegetable oil
  • 1 large egg, slightly beaten
  • 1 tablespoon orange juice
  • 1 teaspoon vanilla extract
Orange Buttercream Frosting
  • ¼ cup unsalted butter, softened
  • 1½ cups powdered sugar
  • 1 tablespoon orange juice
  • 1 tablespoon grated orange peel
  • 1 teaspoon vanilla extract
  1. Mash bananas with a fork.
  2. In a 9-inch square baking pan (or an 11x7-inch pan) sprayed with non-stick spray, stir flour, nuts, sugar, cornstarch, baking soda, and salt with a fork. Add bananas, oil, egg, orange juice, and vanilla. Mix with a fork until blended.
  3. Bake at 350 degrees for 30-35 minutes, or until cake pulls away from sides of pan and toothpick inserted in center come out clean. Cool in pan. Spread with orange frosting.
Orange Buttercream Frosting
  1. Cream butter with an electric mixer. Gradually add sugar, beating well until combined. Add orange juice, orange peel and vanilla; stir to blend. Spread on cooled cake
